Hand-cut Oven-baked Fries

Preheat the oven to 425 degrees.

Cut 4 large Russet potatoes in uniform slices, you know, like fries look. Soak the slices in ice water for 30-45 minutes.

Dump the fires out in a colander and drain the water – make sure they are pretty dry. You can put them back in the bowl and add a little oil then spread the fries out on a cookies sheet in one layer, just so they aren’t touching. If you are watching your calories though, you can skip the oil and spray them and the cookie sheet with cooking spray before they go in the oven. Either way, make sure you spray the sheet heavily or they will stick – even if you are using oil!

After about 15-20 minutes in the oven, flip them over. Ovens and taste buds differ, so just watch them. When they are brown on both sides (about 20-45 mins), take them out of the oven and salt them immediately. Now, here’s my favorite little add on – I use truffle salt instead. I LOVE truffle salt. You can also sprinkle on a little vegan parm and dried parsley flakes! To make vegan parm, just food-processor-up some cashews (or I like pistachios), nutritional yeast, and salt. At some point, I will put up a recipe for vegan parm with exact measurements.
